Ingredients:

  • 500g salmon
  • 2 tbsps olive oil
  • Salt and pepper
  • 1/2 tbsp ginger
  • 1 tbsp garlic
  • 1/2 tsp lemon juice

  • 1 large courgette
  • A handful of sweet potato fries

Method:

  • Heat the oven to 180 degrees Celsius
  • Roughly chop the carrots and courgettes and drop them into a oven proof dish
  • Add the sweet potato fries and baby sweetcorn to the dish and drizzle with 1 tbsp olive oil
  • Leave them in the oven for 30 minutes
  • While that is going, in a pan on the stove, heat up the olive oil on a medium heat
  • Add the salmon to the pan along with the garlic and ginger
  • Grind some salt and pepper and flip the fish to cook each side until the middle of the salmon looses its bright pink colour
  • This should take about 10 minutes to cook the salmon to this point
  • Reduce the heat and add the soya sauce
  • Simmer the salmon on each side in the soya source for 5 minutes
  • Once the veggies are done, take them out of the oven
  • Serve the salmon with the side of veggies

This is a recipe which salmon fans will enjoy.
