- Preparation time: 15 minutes
- Time in the oven: 45 minutes
I’ve made banana bread a good few times, and it always turns out nicely.
Ingredients:
- 2 very ripe bananas
- 1/2 cup flour
- 4 tbsps salted butter
- 3/4 cups of sugar
- 1 large egg
- 1 tsp baking soda
- Pinch of salt
- 1 tsp vanilla essence
Method:
- Turn the oven up to 170 degrees Celcius on the fan setting
- Peel the bananas and mash them with a fork in a mixing bowl
- Melt the butter in a cup in the microwave and once melted add it to the mixing bowl and stir
- In the cup which the butter was poured out of, beat the egg
- Add the beaten egg to the mixing bowl and stir
- Add the vanilla essence to the mixing bowl along with a pinch of salt
- Add the sugar and baking soda to the mixing bowl and stir
- Add the flour and stir
- To even out the mixture I like to use a hand blender with the whisk attachment
- Once the mixture is ready, layer a baking sheet on a baking tray and pour the mixture in the tray
- Pop it in the oven for 45 minutes
After about 45 minutes the banana bread should be a golden brown and if you poke it with a wooden toothpick it should come out clear.
The banana bread makes an excellent snack, I normally just cut them into rectangles and grab one for a snack.
