Vegetarian Tomato Pasta Recipe

This recipe I have is delicious, quick and easy to make if you aren’t afraid of meat-free meals or carbs! Great if you are looking for comfort food.



  • 2 cups penne
  • 1 large red onion – finely chopped
  • 3 chopped garlic cloves – finely chopped
  • 1 tin chopped tomato
  • 2 cubes vegetable stock dissolved in 1 litre of boiling water
  • A chopped chilli
  • Salt and pepper for seasoning
  • Some mixed herbs
  • Tbsp olive oil
  • Tbsp grated red cheddar or parmesan cheese



  • Add the penna to a pot of boiling water with a small blob of olive oil and a bit of salt – put on a high heat on the stove for 20 min
  • While that’s going, in a pan on high heat add a tbsp olive oil, heat that up and brown the garlic and onion
  • Add the chilli
  • Toss in the tin of tomatoes and reduce the heat to a simmer
  • Add the vegetable stock dissolved in boiling water
  • Wait for about 10 min, stirring occasionally
  • Once the penna is done, drain it, toss it back into the pot
  • Add the sauce to the penna in the pot and mix together
  • Dish up and add some cheese on the top along with a bit of mixed herbs
  • Season with salt and pepper

Too easy! If you want to reduce the carbs, skip the cheese. This meal goes well with a side of grilled veggies.
