This recipe I have is delicious, quick and easy to make if you aren’t afraid of meat-free meals or carbs! Great if you are looking for comfort food.
Ingredients:
- 2 cups penne
- 1 large red onion – finely chopped
- 3 chopped garlic cloves – finely chopped
- 1 tin chopped tomato
- 2 cubes vegetable stock dissolved in 1 litre of boiling water
- A chopped chilli
- Salt and pepper for seasoning
- Some mixed herbs
- Tbsp olive oil
- Tbsp grated red cheddar or parmesan cheese
Method:
- Add the penna to a pot of boiling water with a small blob of olive oil and a bit of salt – put on a high heat on the stove for 20 min
- While that’s going, in a pan on high heat add a tbsp olive oil, heat that up and brown the garlic and onion
- Add the chilli
- Toss in the tin of tomatoes and reduce the heat to a simmer
- Add the vegetable stock dissolved in boiling water
- Wait for about 10 min, stirring occasionally
- Once the penna is done, drain it, toss it back into the pot
- Add the sauce to the penna in the pot and mix together
- Dish up and add some cheese on the top along with a bit of mixed herbs
- Season with salt and pepper
Too easy! If you want to reduce the carbs, skip the cheese. This meal goes well with a side of grilled veggies.
