It’s been rather warm and balmy here in Dublin this last week and what a great reason to make a summery starter! I’m a big fan of cooking prawns. There are some great taste combinations that you can add and they have some nice health benefits too: high protein; low calories; Vitamins B-6 and B-12 for energy; iron; zinc, phosphorous, copper and magnesium. Plus they are quick and easy to make. Here’s my latest hit:
Ingredients:
- 250g King Prawns
- Salad leaves (mint, rocket, coriander)
- 1 tbsp olive oil
- 1 tsp salted butter (melted)
- 1/2 tsp chopped ginger
- 1/2 Garlic clove (crushed)
- 1 or 2 leaves lemongrass chopped
- 1 small chopped chilli
- A grind of salt and pepper
Method:
- Turn up the oven to 180 degrees Celcius
- Prep your ingredients: chop your ginger, lemongrass, chilli and crush the garlic
- Add your prawns to an ovenproof dish
- Cover the prawns with olive oil and melted butter
- Throw your prepped ingredients onto the prawns
- Mix the prawns with the prepped ingredients, olive oil and melted butter so they are nicely covered
- Add a grind of salt and pepper
- Put them in the oven for 30 minutes
- Layer a bowl with your salad leaves
- Take your prawns out the oven after 30 minutes
- You can have the prawns hot or cold – I let them cool down before putting them on the salad leaves
