Taco Boats Recipe

Taco’s in general are an easy to whip up meal and they are always delicious. Something about their meaty-cheesy-tangy flavour that makes them irresistible. I found these taco shells in boat shapes and couldn’t wait to make them for dinner.

Ingredients:

  • 1 Large red onion
  • 250g Lean mince
  • 1 cup Grated cheese
  • 1/2 cup Black beans
  • 3 Chopped jalapeno
  • 1 Chopped tomato
  • A couple chopped lettuce leaves
  • Taco shells
  • Guacamole
  • Sour cream
  • Salsa
  • Salt and pepper for seasoning
  • Tumeric
  • Paprika
  • Ground cumin
  • Dried oregano
  • 1 tbs Olive oil

Method:

  • Boil the black beans on a high heat for 30 minutes
  • In a pan brown the onion and cook the mince in some olive oil
  • Once the mince is done add all the spices, herbs and a sprinkle of salt and pepper
  • Chop the lettuce, jalapeno and tomato
  • Once the beans are done they should have a slight crunch to them, strain them and add to the mince and mix
  • Grab your taco boat, add a layer of mince and beans
  • Sprinkle cheese over the mince and beans
  • Add sour cream, guacamole, salsa, jalapeno and tomato on top of the cheese
  • Top off with lettuce
