Taco’s in general are an easy to whip up meal and they are always delicious. Something about their meaty-cheesy-tangy flavour that makes them irresistible. I found these taco shells in boat shapes and couldn’t wait to make them for dinner.
Ingredients:
- 1 Large red onion
- 250g Lean mince
- 1 cup Grated cheese
- 1/2 cup Black beans
- 3 Chopped jalapeno
- 1 Chopped tomato
- A couple chopped lettuce leaves
- Taco shells
- Guacamole
- Sour cream
- Salsa
- Salt and pepper for seasoning
- Tumeric
- Paprika
- Ground cumin
- Dried oregano
- 1 tbs Olive oil
Method:
- Boil the black beans on a high heat for 30 minutes
- In a pan brown the onion and cook the mince in some olive oil
- Once the mince is done add all the spices, herbs and a sprinkle of salt and pepper
- Chop the lettuce, jalapeno and tomato
- Once the beans are done they should have a slight crunch to them, strain them and add to the mince and mix
- Grab your taco boat, add a layer of mince and beans
- Sprinkle cheese over the mince and beans
- Add sour cream, guacamole, salsa, jalapeno and tomato on top of the cheese
- Top off with lettuce
