Sticky BBQ Chicken Veg

This is a quick and easy meal with some great flavours.

Ingredients:

  • 300g chicken thigh meat
  • 1 avocado (I used the graffiti variation)
  • 200g spinach
  • 100g potato wedges
  • 1 bringel
  • 2 tsp olive oil

 

Method:

  • Turn up the oven to 200 degrees celcius
  • Chop the bringel, toss it into a small casserole dish with some olive oil and salt
  • Add potato wedges to the oven in a baking tray with a light drizzle of olive oil
  • Heat up some olive oil in a pan and brown the chicken
  • Once the chicken has been browned, turn down the heat and add 2 tablespoons sticky BBQ sauce
  • Boil the kettle, throw some water into a pot and boil the spinach for 5 minutes and sieve the water out
  • Cut up that avocado

Too easy!
