This is a quick and easy meal with some great flavours.
Ingredients:
- 300g chicken thigh meat
- 1 avocado (I used the graffiti variation)
- 200g spinach
- 100g potato wedges
- 1 bringel
- 2 tsp olive oil
Method:
- Turn up the oven to 200 degrees celcius
- Chop the bringel, toss it into a small casserole dish with some olive oil and salt
- Add potato wedges to the oven in a baking tray with a light drizzle of olive oil
- Heat up some olive oil in a pan and brown the chicken
- Once the chicken has been browned, turn down the heat and add 2 tablespoons sticky BBQ sauce
- Boil the kettle, throw some water into a pot and boil the spinach for 5 minutes and sieve the water out
- Cut up that avocado
