Peanut Butter Protein Pancakes

With my goal of increasing protein and decreasing my amount of sugar intake, I have been searching the internet for foods which will help me achieve my goal.

The recipe I used and adapted is: Buff Dudes: 3 Ingredient Protein Pancakes

This was brilliant for a low carb, low sugar, high protein breakfast, and it was also super quick to make.

Ingredients:

  • 2 Eggs
  • 1/2 cup milk (The recipe calls for fat-free milk, but I don’t have any so I used full fat)
  • 1 Scoop whey protein (I used chocolate peanut butter whey protein)
  • 1 tsp Crunchy peanut butter (easy on how much you use, it is a high-calorie food)
  • 1 Banana chopped up

Method:

  • Crack 2 eggs into a Pyrex jar
  • Add 1/2 cup milk
  • Add the whey protein
  • If you like thicker pancakes which are more of a flapjack consistency, add 1 Tbsp all-purpose flour or pancake flour if you have any
  • Whisk everything together so there are no lumps
  • Greece the pan with butter or oil
  • On medium heat add the blob of the mixture
  • When it starts bubbling, you can turn over the pancake
  • Serve with a little peanut butter and topped off with the chopped bananas
