Be Green Stir fry Recipe

Green veggie stir fry recipe:

This one is great if you don’t have a lot of time to cook or don’t want to have a lot of time to cook! It takes about 20 minutes to make everything which is very convenient if you don’t want to dedicate your evening to cooking – and this is delicious.

Ingredients:

  • 250g Baby leaf spinach
  • 1 large courgette (or zucchini depending on what you want to call it!) chopped
  • A handful of green beans chopped
  • 1 Aubergine chopped
  • 1/2 Chili chopped
  • 2 tbs Olive oil
  • 250g Beef strips
  • 100g Penne
  • A splash of Teriyaki sauce
  • Another splash of Sesame seed oil
  • Ground salt and pepper for seasoning
  • Mixed herbs

 

Method: 

  • Heat up a pot of water, adding a little salt and drop of olive oil
  • Once the water is boiling, drop in the Penne
  • For the meat and veg, if you have a wok this will make your life easier – heat up the 1tbs olive oil on a high heat  and throw in the veggies and fry them up till they still have a slight crisp
  • Make sure you add your spinach last – it just needs a 1 minute on the fry
  • If you have a normal frying pan you’ll need to fry up the veggies in portions!
  • When the veggies are done, put them aside in a mixing bowl
  • In your frying pan, add the other tbs of olive oil and brown the meat
  • Add salt, pepper, chili and mixed herbs to the meat
  • Add the Teriyaki and Sesame seed oil
  • When your Penne is cooked through, drain it and serve
  • Cover the veggies over the Penne
  • Add the meat on top
